I made this for the last 3 years and I have gotten such rave reviews that I am sharing it with the lovely imamother world Smile

Crust
-2 c. chocolate sandwich cookies, crushed
-1 tbsp. sugar
-1/4 cup melted margarine

Mix and pat into 9" springform/pan (if you plan to serve slices use pan, springform is if you want to bring entire cake to table).

-2 cups white chocolate chips
-1/2 cup half-and-half cream
-3 (8 ounce) packages cream cheese, softened
-1/2 cup white sugar
-3 eggs
-1 teaspoon vanilla extract

Preheat oven to 325 degrees. In saucepan, melt white chocolate chips with half-and-half, stirring occasionally until smooth.
In a large bowl, mix together cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time. Blend in vanilla and melted white chocolate. Pour onto crust. I always do a waterbath (take a cookie sheet, fill with water and place springform onto water-filled cookie sheet) which allows it to cook evenly and you get no cracks on the top of the cheesecake. Bake for 55 to 60 minutes, or until filling is set. It is simply divine!!!

It's a type of creamer that is often used for coffee. Located in the dairy aisle in the supermarket, near the milk.

Sounds amazing. I can almost taste it. I think I'll try it next year. Already have my yummy cheesecakes done for this year.

Regular half and half can be substituted by using half heavy cream and half milk. But the recipes seems to call for half and half cream.
