I have a package of pepper steak & I want to try & make some kind of beef with broccoli. Does anyone have a good recipe? Also, how can I make sure the meat is soft, but the broccoli is not overcooked? TIA!

I'd suggest using the beef and broccoli recipe from KBD kids. But since you are using pepper steak, I'd cook that for 2 hours, and add the broccoli only later on.

I don't have a recipe, but I would suggest steaming the broccoli separately until the doneness you prefer, amd combining with the beef immediately before serving. Otherwise its guaranteed to be soggy.

Use the one referenced above. But cook the pepper steak with onions, garlic and just enough water, for a while, until tender.
Steam broccoli separately.

Sorry to nudge but her recipe there is a bit unclear? I’m just the type that needs everything spelled out...

This is what it says

8 oz spaghetti, cooked
3 T soy sauce
2 T toasted sesame oil
2 T sugar
1 T canola oil
1/2 large onion, sliced
4 garlic cloves, minced
1 t ginger, minced
1 lb meat, cut into thin strips
1 t beef bouillon powder dissolved in 1/2 cup water
3 T soy sauce
1 T hoisin sauce
8 oz frozen broccoli, steamed

Toss cooked spaghetti with 3 tablespoons soy sauce and 2 tablespoons each sesame oil and sugar. Set aside.
Heat 1 tablespoon oil in a large skillet. Add the sliced onion and saute 5 minutes. Add 4 minced cloves garlic and 1 teaspoon grated ginger and saute additional 2 min.
Add meat and saute 5 minutes until no longer red. Add the bouillon dissolved in water and continue stirring.

[Since you're using pepper steak, at this point simmer meat until tender. Once done, make sure there's about 1/2 cup of liquid left before you continue the recipe.]

Add 3 tablespoons soy sauce and 1 tablespoon hoisin sauce to the pan and mix until well combined and sauce has thickened.
Remove pan from heat and toss together with the seasoned spaghetti and steamed broccoli. Serve.
