can I bake egg rolls (dont want to fry them)
also I have lots of extra dough (frozen) anything I can do with it?

I believe you can. You need to brush them with oil.
You cut each extra wrapper in half and make moroccan cigars. Or cut even smaller and make won tons.

rather than brushing with oil use a spray oil - it uses less calories
for the left overs you can spread them with chocolate spread or date spread, roll them up and bake - nice to have with dessert

I've baked them and they come out crispy and great - just make sure, as Jewish Mother suggested, to spray them with cooking spray first.
