This is made with cooked/mashed carrots, but I wonder if you might be able to substitute baby food carrots instead. Regardless, these are REALLY good:
3/4 cup pureed carrots
1 tbs vanilla sugar
1/2 cup oil
2 eggs
1 cup sugar
1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
pinch of salt
1 tsp vanilla extract
2 tbs orange juice
dash of cinnamon
Boil chunks of carrots until soft, then mash with fork. In a mixing bowl add all the rest of the ingredients and pour into individual muffin tins, spray with oil or use cupcake holders. Bake on 350.

My oven works funny, so I am always nervous about giving out cooking time instructions. I would say check them after 20 minutes or so?

I use this recipe all the time and it's absolutely delicious. I'd go for the boiled carrots and not try the baby food.

I've been looking for a carrot baby food recipe too bec my baby won't eat hers and now I've got tons of extra jars. I think I'm going to try this with baby food. I'll let you know how it comes out (unless you try it first, in which case, please let me know!!)

This recipe is very moist and freezes very well. I always double the recipe.
Mix:
2 cups flour
2 cups sugar
1 tsp baking soda
1 tsp baking powder
Add:
3 small jars baby food carrots
1 small can crushed pineapple (no juice)
1 cup oil
4 eggs
1 teaspoon salt
1 tsp vanilla
1 tsp cinnamon
Mix all together
Pour into greased pan
Bake 350° 1 hour for large pans; 30 minutes for 24 muffins.
Enjoy
