Does anyone have a good and easy recipe for cinnamon sponge cake with a crumb top? Thanks

This isn't exactly a sponge cake, but it is very good.

Cinnamon Cake

1 cup oil
4 eggs
2 cups sugar
1 teaspoon vanilla
1/2 cup water
1/2 cup orange juice
3 cups flour
3 teaspoons baking powder
sugar and cinnamon to taste

Preheat oven to 350 degrees. Spray tube pan with Pam.
Combine ingredients. Spread half of the batter in the pan. Top with cinnamon and sugar to taste (a lot is good). Cover with the rest of the batter and top with more cinnamon and sugar.
Bake at 350 degrees for 40-45 minutes.

Thanks! Sounds perfect!

Are sugar and cinnamon part of the batter as well or only used to sprinkle in between and on top of the batter?

Only between and on top of the batter (though I'm sure you could also swirl some in if you'd like).

OOTbubby I just made your cinnamon cake. It was so fast an easy to make. It is now in the oven and smells heavenly. I'll let you know how it comes out.

For sure in a 9 x 13 - might need less baking time though, make sure to check it for doneness.

In a Bundt the problem is that the cinnamon sugar mixture will stick to the sides of the pan so it will be hard to remove it in one piece.

I made it in a 9x13 pan and it looks fine. Also it rose so I am happy I put it in a big enough pan

The cake came out very good. Its a light fluffy cake with cinnamon in it. Very good. was a great thing to fast out on. Thanx for the recipe.

They both have tubes in the middle to help with height of the cake but a tube pan is for delicate cakes like angel cake (angel cake can't be made in a bundt, though reg bundt cake recipes can be made in a tube).
