Oatmeal Cranberry (Apple) crisp

Does anyone havea good and easy recipe? Bonus if it can be frozen!

I mix 1 cup flour (can be whole wheat), 1 cup oats, 1/2 cup demerera sugar and around 1/2 cup oil (I add it until it sticks together but isn't too wet).
Put 1/2 - 3/4 on the bottom of a 9x13 baking pan.
Add layer of sliced peeled apples and 1/2 can (or more) of jellied cranberries - I have also substituted this for fresh plums.
Crumble the remainig batter over the top (it should be a little wet).
Put in the oven for about 40 min.

FILLING
6 apples
2 tsp lemon juice
1/3 cup sugar
1/2 tsp cinnamon
1 can whole cranberries in sauce

CRUMBS
2/3 c brown sugar
1 c oatmeal flakes
1 c flour
1 stick margarine, softened
1 tsp cinnamon

Mix apples with lemon juice, sugar, and cinnamon.
spread on the botttom of a pan
pour cranberries on top
mix crumb ingredients and crumble on top of cranberries.

bake on 350 for 1 hr (I like to bake it for longer)

Freezes great raw, maybe also baked but I never tried.
This is finished to the end every time I make it. It's great, and a classic.

Here is a slight variation of the recipe by mizle10.

2 c. flour
2 c. oatmeal
2 sticks margarine, sliced into thin pats
1 1/3 cup brown sugar
2 tsp. cinnamon
4 apples, peeled, cored and thinly sliced
1 15 oz. can cranberry sauce
Servings (servings) recalculate

Preparation
1. Preheat oven to 350. Grease 2-9"pans (or a 9x13 pan).
2. In a large bowl, mix together flour, oats, sugar and cinnamon. Add margarine and with fingertips crumble together until small clumps form.
3. Use 1/2 of crumbs and press a thin layer into the pans to form crust (1/4 of total crumbs for each pan). Top each crust with 1/2 of the apples and then 1/2 can of the cranberry sauce. Use remainder of crumbs (1/2 for each pan) and sprinkle over fruit.
4. Bake 45 minutes- 1 hour until crumbs are browned and apples soft.

makes 2 9" round pans. Freezes very well.

Here's what I do (actually just put it in the oven b4 I saw this). I don't really measure but I use
About 6-7 apples, peeled and sliced
Place in a bowl and mix with one can of cranberry sauce (I use Gefen Jellied cranberries)
Sprinkle a layer of brown sugar to taste (keep in mind it gets a little sweeter when it bakes).
Sprinkle cinnamon, a little nutmeg, a little bit of ground cloves, and a tinsy bit of ginger (I only use ginger if I have it around)
Mix all together and add a handful of flour (WW or regular), mix pour into baking dish of your choice.
In separate bowl mix about a cup and a half of oats, a handful of flour, and 2TBSP of oil. Mix and sprinkle on top of apple mixture. Bake 350 for an hour - hour and a half.
Tip: It can drip in oven, so I put the dish on a cookie trey lined w/ parchment paper.
Yummm make it all the time and its a huge hit Smile

I never did but it should work. It will probably just be crumbier (sp?).

As a site note, I think the right terminology here would me "more crumbly" because crummier has a different connotation (I think) Smile

Made this recipe. I doubled the amount for the crumb mixture so it had a crust on the bottom and crumbs on top for extra yumminess, and this way it was able to be cut into neat squares. Delicious! Thanks for posting.

Do apples get Sliced? Chopped? Shredded?
