Stuffed peppers without meat

Anyone have (or can put one together for me) a recipe for peppers stuffed with rice and cooked in tomato sauce? Can I freeze it?

Make rice, mixed with can tomato, salt and pepper.
Stuff the pepper with it, bake until pepper is soft.

I made this once yrs ago and I cant remembr much about the taste but that was basicaly all I put in it.

theres a nice recipe in the spice and sprit. I think with brown rice and herbs. it was good. or check on website like allrecipes.

I just made and froze stuffed peppers with meat and rice and they came out beautifully. without meat is basically the same thing so no reason why it should not work.

6 peppers (says green but I would use all colours, looks and tastes way better)

stuffing;
1/2 cup breadcrumbs
1 tsp marjoram
2 cloves minced garlic
2 tbsps minced fresh parsley
2 eggs
2 tbsps chopped celery leaves
1 onion diced
1/2 cup cooked brown rice
2 tomatoes sliced
1 cup tomato or marinara sauce

preheat oven to 350.

cut tops of peppers, and deseed. parboil for one minute in boiling water.

combine everything except tomatoe and fill each pepper with mixture. place peppers side by side in well oiled casserole. place slice of tomato on top of each one. cover casserole, bake 45 minutes, uncover, bake another 15.

pour tomato sauce over andf bake another 10 minutes until sauce is hot.

optional. add half a pound of chedder or meunster to stuffing before baking.

I woud add some sauted onions and mushrooms gives it a good taste.
