Egg salad and tuna salad. We have tons left over from a Shabbaton (and never tried freezing either before). Thanx!

Well, you have two choices.

You can either freeze them, and see what happens and worse comes to worse, you end up throwing it away then.

Or you can decide to not freeze it and end up throwing it away now.

it will probably taste VERY soggy and unappetizing after being defrosted.
I'd go with using whatever you can now, giving away the rest.

I've heard that mayo does NOT freeze well, so if the salads have mayo I'd tend to think freezing wouldn't be such a great idea.

If you live somewhere like NY, maybe there's an upcoming lchaim/sheva brochas/bris that could use some donations in your area.

Of if you live near a yeshiva, as I do, just invite a few bochurim over....that'll do the trick! Smile

salads made with mayo do not freeze well, nor do hard-boiled eggs or anything made with them. either use the salads up or give them away to anyone who will take them. (Now you know why I politely decline when offered shalosh seudos leftovers to take home.)

Maybe u can make tuna patties with the tuna salad, once it's fried or grilled, u shouldn't have a problem freezing it.

In camp, we used to get egg salad from the freezer... it was NOT appetizing Rolling Eyes
