This is the BEST cream of broccoli soup recipe.

2 tablespoons butter
1 Vidalia onion, chopped
1 stalk celery, chopped
3 cups pareve chicken broth
8 cups broccoli florets
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
ground black pepper to taste
dash of nutmeg

Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 15-20 minutes.
Use a stick blender and puree the soup right in the cooking pot.
In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and nutmeg and serve.

Non Dairy Cream of Broccoli Soup from Joy of Kosher

Ingredients

3/4 cup chopped onion
4 tablespoons canola oil, divided
3/4 pound broccoli, chopped coarse
3 cups vegetable broth
2 tablespoons flour
1 cup soy milk

Directions

Heat soup pot over medium heat. Add onions and oil. Saute until tender. Add broccoli and broth, cover and simmer for 10 minutes or until broccoli is tender. Pour the soup into a blender or use an immersion blender to puree the soup. Place a small saucepan over medium-heat add 2 tablespoons oil, stir in flour and add soy milk. Stir until thick and bubbly, and add to soup. Season with salt and pepper to taste and serve.

Thanks lollygirl. I am trying it tonight but using double cream instead of the milk to make it creamier. Looking forward!

What's chicken broth or vegetable broth? It doesn't seem the same as chicken soup mix as these recipes call for a few cups.

It's about 1-2 TB chicken soup mix per cup of water.

You can substitute the broth by mixing half a Tbsp of chicken soup mix/consomme in each cup of boiling water (ie. 1.5 Tbsp consomme in 3 cups boiling water for above recipe).

Quick broccolli soup
4 med squash
1 large onion
4 frozen garlic cubes
1 bag (1.5lb) frozen broccolli
Salt to taste

Saute onion add in garlic cubes peeled and cubed squash and broccolli. After a few minutes add in water to cover cook until veggies are very soft. Blend with stick blender. Enjoy
