What is your "weird" or #1 ingredient that you add to your dish that makes it extra special? For me, I find that adding soy milk to my cake makes it very moist. What is yours?

A couple of teaspoons of instant coffee to my cholent! Don't worry - it's decaf - fear not for your Shabbos naps!
Got the idea from mimivan, though I don't recall if she specifically uses it in cholent or other meat dishes.

I don't know if this would work for everything, but my oatmeal chocolate chip cookies or oatmeal squares, I add 1 t. cinnamon

vodka!
obviously pure vanilla extract in cakes
vodka in salted fish
vodka in sauces for chicken
The alcohol cooks out, and the flavor stays. Delicious!

water and instant mashed potato to my egg salad-it comes out really creamy and you cant taste it alt all...

a drop of pareve sour cream to egg salad to make it creamy, or mustard seed powder to egg salad to give it a tangy twist.

Apple cider vinegar in guacamole, or a sprinkling of brown sugar in salads.
Also a very small, small dash of cayenne pepper in something like macaroni and cheese or soup will give it a great kick and you won't notice it's spicy!
