I've been having a lot of energy crashes lately and it's been suggested that I try to cut down on refined carbs and go for a higher protein, low glycemic index (did I get that right?) diet. Not an official diet, just an attempt to eat things that might make my body happier. It's just a theory, I don't have any known blood sugar problem but I'm hoping maybe I can clear this up with preventative action...
Anyway. Someone suggested oatmeal cookies/muffins/whatever would be better than regular flour kind. And I've read that agave nectar is better for this than sugar. So I bought both on my weekly shopping trip. Other than that and some whole wheat flour already here, I'm not going shopping again and don't own any special healthy ingredients. Looking for ideas of what I can make with what's in my kitchen.
(I'm eyeing this recipe http://overtimecook.com/2011/0.....fins/ but it has sugar substitute in addition to the agave, is that OK? Also has milk/soy milk and my muffin tin is parve. Sigh.)
