Wow. Just made these cookies: http://www.eatliverun.com/chew.....kies/ and they are INCREDIBLE.
Easy and chewy and fudgy and sophisticated-tasting and chocolately and optionally caffienated... DEAR LORD, these are good cookies!!! I skipped the white chocolate drizzle, so if you go for that level of decadence, let me know.
I also like that they don't have a separate mint frosting or filling or glaze -- the mint is mixed right into the cookie batter, so it's a one-bowl recipe.
Also, I prefer lots of little cookies, so while the original recipe cooks tablespoon-sized cookies for longer, I went with rounded teaspoon-sized cookies for 6-8 minutes.

Ingredients:
1 cup (2 sticks) margarine, softened
1 1/3 cup sugar
1 tsp peppermint extract
2 eggs
1 tbsp instant coffee
1/2 cup cocoa powder (I used a mix of regular and Dutch process)

1/2 tsp salt
2 1/4 cups flour
1 1/2 cups dark chocolate chips
optional: 1 1/2 cups white chocolate chips
Directions:
Preheat oven to 350.
Cream margarine and sugar together until light and fluffy, then add eggs one at a time, beating well after each addition. Add peppermint extract.
Add cocoa, flour, coffee, baking powder and salt to wet ingredients and fold in chocolate chips.
Drop tablespoons of dough onto lined sheet trays and bake for 10 minutes. Let cool completely.
Optional: Melt white chocolate chips in the microwave (stirring after each 30 second interval) and scoop into a small plastic bag. Snip off end and drizzle cooled cookies with white chocolate. |

I never tried it with plain "mint" extract, only peppermint. I don't know if mint extract contains other mint flavors other than peppermint, like wintergreen or spearmint -- so there is a chance it may taste different (I only like peppermint), but I don't know.

In case anyone is interested- I used oil instead of margarine, and the cookies came out great. They don't look very special without the drizzle, even though they taste yummy, so I would not skip that if using for MM or guests.

How much oil? |
A little less than a cup- maybe 7/8?

I tried using the israeli white "chocolate" chips to drizzle--big mistake. It didn't. It was too thick. Maybe because it's fake? I think you have to use real white chocolate to do that.
So my MM will look homey as opposed to fancy. Oh well.

The white chocolate chips are just imitation in Israel. You can buy real white chocolate for baking in specialist baking shops/ people selling from their houses.
