I ended up just substituting gvinah levana for cream cheese and cottage cheese (the 9%, I find that's the most creamy/least piecy) for farmer's cheese and using a regular recipe. it was a little runnier and harder to fill the danishes without making a mess, but they were yummy! ;-)

p.s. if you have more time you could also make real cream cheese from shamenet (let me know if you need the recipe) and that would probably work much better. also I've heard tuv taam cheese is the closest thing to farmer's cheese.

Thanks! I was just about to ask you what the closest thing to farmers cheese was.
What's Tuv Taam cheese?

My Israeli neighbor makes a delicious pas gvina (cheese danish loaf) and this is the filling she uses. It's really delicious and comes out perfect! This makes a few loaves so you may want to halve the filling, I don't know. It's also good just to bake by itself as a cheesecake
Filling
1 kg 9% gvina levana
2 eggs
1 pk vanilla instant pudding
2 cups sugar
8 tablespoons flour

Can you post the non-filling part? It looks very yummy.
