it's all in the way you close them ladies...

Here is what NOT to do:


Because they will come out looking something like this. (at best)


the trick is to put only a little bit of filling in the center, like this:


It's all in the way you close them before baking... try to close them as much as possible... like this:

I learned long ago that pinching them can make them open, but folding them as you've done, leads to nice, non-explosive/stay closed yumminess.

does anyone fold a square in half to make a triangle? I've never seen it except in an older drawing. You couldn't see the filling but it sounds much easier!

that would be more of a pirogi, not really a hamentash I think.

I think it depends on the dough. I pinch mine and they stay closed, bli ayin hora (I haven't baked them yet this year)

I was not planning to attempt to bake hamantashen ever, ever again in this lifetime but your pics gave me the fortitude to persevere...

3 C flour
1/2 C sugar
8oz C shortening (I used 1 stick of margarine)
2 tsp baking powder
1 tsp vanilla
1/2 C seltzer (I used apple juice, but you can use any juice)
3 egg yolks (I fried the whites and fed it to my DS for lunch)

~cream margarine & sugar. add rest of ingredients. I found that the dough was a bit too crumbly, so I added a bit of oil to make it less crumbly and more like cookie dough... I literally added drops of oil at a time so that it wouldn't become too greecy... I think in total I added about 1/2-1 tsp of oil mayb a bit more...

bake at 350 for 15 mins...

it really is one of the best cookie doughs I ever made... it was very soft and flavorful (and easy to work with)

Thanks so much for posting this! The photos really helped.
They turned out so well, I made a second batch, and there are so few "flops" that we aren't getting more than one each to taste test!
The few that did open were either because I didn't put the choc chips in well, or because I wasn't careful with the folding.

normally I see uteruses (uteri?) in everything - but missed it in these hamentachen...now I see it. Liba you are so funny!
