Stovetop Vegetables

Any ideas for a variety of stovetop cooked vegetables?

So far I have

sauteed zucchini
sauteed garlic asparagus
summer squash with tomatoes
julienned carrots with dill

I will definitely miss my green beans!

What else can I add to my list for variety?

(I don't use peppers, eggplant or tomato sauce.)

Beets? sweet and sour/in sauce/shredded/salad.
You can make tomoto sauce easily by blending tomatoes, cooking them and adding spices.

Here is really delicious side dish:

1 Medium Onion
2 tablespoon/s Oil
1 box Mushrooms
1 1/2 cup/s Yellow Zucchini Cut In Strips
1 1/2 cup/s Green Zucchini Cut In Strips
1/4 cup/s Hot Water

Preparation
Slice the onion into strips. Heat the oil and saute the onions over medium-high heat. Add the rest of the vegetables and continue to saute about 10 minutes. Combine the hot water with potato starch and add to the vegetable mixture. Cook for another 3 minutes until thick. Season with salt and pepper to taste.

steamed cauliflower or broc, creamed spinach or saute an onion and mushrooms add spinach and spice or salt, glazed carrots

Pesach Vegetable Kugel

3 zucchinis
3 carrots
3 potatoes
2 onions
Fresh herbs optional
6 eggs
2 tsp sugar
1 Tbsp salt
½ cup potato starch
½ cup olive oil or schmaltz

Peel Vegetables. Shred vegetables in food processor.
Mix remaining ingredients.
Pour in vegetable mixture.
Pour into greased 9x13. Bake at 350 for 1 ½ hours.

For something a bit different, you can do a ratatouille-type dish- chock full of vegetables.

Saute lots of chopped onion, and add crushed tomatoes
Throw in lots of halved garlic cloves
Bring to light boil and reduce
Add okra some sliced zucchini, and some button mushrooms
Add a hot pepper (serrano or jalapeno)
Simmer until everything is tender, take out hot pepper.

This is so yummy served on top of quinoa or if you eat kitniyot, rice.
