This one's yum!
Chocolate Chip Cookies
• 2 egg whites
• ¾ cup sugar
• ¼ tsp salt
• 1 tsp vanilla
• 1 cup ground nuts
• 1 cup chocolate chips
Beat whites. Add sugar. Add vanilla and salt. Fold in nuts and chocolate chips. Spoon onto cookie sheet and bake for 10 min.

How many cookie sheets of cookies does this make?
Can I roll into balls so they are uniform, or is it better to just spoon the batter as directed?
One more thing Do they taste similar to almond cookies (almonds, sugar, eggs)? Should I go with a recipe that calls for potato starch, brown and white sugars, almonds, choc chips, for a more choc chip cookie feel if I'm already making almond cookies?

Wow - waaaay too many questions I can't answer!
I don't remember how many cookies I got from these.
The batter isn't really "workable", so you can't really shape them into balls, it won't really work.
No idea if they taste like almond cookies, never having tasted those - just know that these are really really good - and in case you can't tell by my avatar, I'm a chocolate chip cookie nut!

for this recipe, do the egg whites get beaten till soft peaks?

This one doesn't require separating eggs!
CHOCOLATE CHIP COOKIES
1 c sugar
1 c brown sugar
2 eggs
2 sticks margarine
1 T vanilla sugar
14 Oz nuts
2 c potato starch
1 ½ bags chocolate chips
Bake at 350 for 12 minutes, let them cool then remove with a spatula.

I made this one up myself, combining a couple recipes. They came out great!
Chocolate chip cookies-my recipe-makes about 85:
1 cup sugar
1 cup brown sugar
2 eggs
1 cup oil
2 tsp vanilla sugar
2 bags ground almonds
1 cup potato starch
1 tsp baking powder
1 tsp baking soda
1 cup choc chips
Mix, shape, freeze, bake 350 12 minutes

Sorry, I will clarify. I shape the cookies and then freeze them for about 10-20 minutes right before baking. I learned this trick to keep pesach cookies in general from flattening too much. So I do 2 cookie sheets worth, put the in the freezer. The rest I shape and put them in the freezer when I take the others out. You can also put them on a cookie sheet close together and freeze a lot at once. Then just take out what you have room/oven space to bake as needed.
Editing to update: I just made a batch of them without freezing first. They look perfect. My kids kept asking if these are pesach cookies. And took 15 minutes in my oven. (I made them in s/o elses before).

Reposting my recipe from another thread:
Pesach chocolate chip cookies
Preheat oven to 375.
1/3 C walnut (or other) oil
1/3 C sugar
1/2 C brown sugar
1 egg
2 t vanilla sugar (I use 1.5-2 t real vanilla, not imitation. It's expensive, but really makes a difference in taste).
Mix together.
In a separate bowl, mix:
1/3 C potato starch
2/3 C matzo cake meal
1 t baking powder
1/2 t salt (add or subtract to taste)
Add dry ingredients to wet. Add chocolate chips. Drop onto baking sheet lined with parchment paper.
Bake for 6 minutes, then switch racks (put the pan that was on the top rack onto the bottom, and vice versa). Bake for another 6 minutes.
Remove paper from hot pan, and cool completely before transferring cookies.
Enjoy!

This is THE BEST Pesach cookie recipe EVER. You would never know it's for Pesach. (It is gebrokts.)
1 cup brown sugar
Half cup sugar
One cup oil
tsp Vanilla
Two eggs
1 Tsp baking soda
Vanilla pudding
1 1/2 cups cake meal
Choc chips
Bake at 375 for eight minutes
