Does anyone have a no separating egg recipe for a Pesach vanilla cake or sponge cake?
Is that even possible?

We don't eat gebrokts. Sorry, I should have specified.

I figured you didnt, but ya never know....
The recipe whips the whole egg for 15 minutes until it expands and fills the bowl. Maybe that would work in a regular separating the eggs recipe instead?

Here is a non-separating egg chocolate cake recipe. It's very good, and looks like a regular chocolate cake.
CHOCOLATE CAKE
8 eggs
1 c oil
2 c sugar
1 c cocoa
1 c potato starch
¼ c sweet wine
1 t baking soda
Bake 1 hr 10 minutes at 350

Okay, here it is:
The lady who gave it to me said she makes it in disposable pans and freezes them. They freeze nicely and are good all year round.
10 eggs
2 cups sugar
1/4 tsp salt
1 cup cake meal
Juice from one lemon (rind optional) (can substitute orange juice, use less rind)
1/3 cup potato starch
Beat whole eggs for 20 minutes or till bowl is almost full.
Add sugar and salt. Keep beating
Add cake meal. Beat.
Add juice and rind. Beat.
Add potato starch. Beat one minute or till starch is mixed in.
Pour into 10" greased tube pan. Bake 350 for 1 hour.
Turn pan upside down to cool. Freeze in pan or wrap in saran and foil.

I have a recipe for vanilla cake with a crumb topping made with lady fingers. Mine didn't come out good - I under baked it because the topping looked like it was getting done. But maybe other people had better luck with it. I might be able to find it and type it up here. Are you interested?

Is that the crumb cake from KBD? If so, I can try to find it. Thanks for the idea!
Do you think it would be good without the crumb topping, and just a glaze or frosting?

Yes, it's from Passover by design. I don't have the book, but saw this recipe reprinted somewhere. I can't answer specific questions, because I don't have experience with this cake - but sounds like you might be able to experiment with this recipe.

I am not sure which site I got this from and I have not made it yet, but it seems easy enough to give it a try. you can also make both the yellow and chocolate batter and swirl them together to create a marble cake.
Yellow Cake
4 eggs
1½ cups sugar
1 cup oil
¾ cup ground almonds (or walnuts)
1 cup potato starch
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla sugar
1 teaspoon rum extract
Mix well & bake in 9 x 13 pan at 350 degrees for 1 hour
******************************
Chocolate Cake
4 eggs
1½ cup sugar
1 cup oil
½cup ground walnuts
½cup cocoa
3/4 cup potato starch
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla sugar (optional)
Mix well & bake in 9 x 13 pan, 350 degrees, for 1 – 1 ½hours.

I've made the crumb cake from KBD and it is good. I don't know about a glaze or frosting though as the crumb topping kind of melts into and combines with the cake. I don't know what the cake would be like without it.

Just coming back to let u know that I took a recipe for sponge cake that called for separating the eggs, but didnt. I followed the method from the recipe I posted. I beat the whole egg for 15 -20 minutes until it really increased in volume. Then I added in the rest of the ingredients with the mixer on a slower speed.
It came out perfect! Even better than when I separated the eggs.
The recipe I used was from OOTBubby ( I think).

Here is an excellent sponge cake/yellow cake:
Sponge Cake
10 eggs, separated
1 cup sugar
1/2 cup oil
3/4 cup potato starch
1 tsp. baking powder
1 pkg. (3.5 oz.) instant vanilla pudding mix
Beat whites. Beat other ingredients and carefully fold into whites. Bake in either a lightly greased tube pan or
9 x 13 pan at 350 for 1 hour. |
