Chocolate Nut Biscotti (Whisk Magazine, 3/21/12)

1/3 cup oil
2/3 cup sugar
2 eggs
1/3 cup cocoa
½ cup potato starch
1¼ cup ground almonds
2 tsp. baking powder
½ cup chocolate chips (I use minis)
¼ cup toasted almonds

Garnish
6 oz. baking chocolate
caramelized nuts

Preheat oven to 350. Line a baking sheet with parchment.

In mixer, cream oil and sugar. Add eggs and mix well. Gradually add cocoa.

In small bowl, combine potato starch, ground almonds and baking powder. Add to mixer alternating with chocolate chips. Add almonds. Do not over mix.

Refrigerate for ½ hour.

With wet hands form 2 loaves on baking sheet. Smooth with water.

Bake for 20 minutes. Cool slightly. With serrated knife, cut into 1" strips. Lay on sides and bake for 5 minutes more.

To decorate, melt chocolate. Smear chocolate on biscotti with spatula. Sprinkle caramelized nuts on top. Freezes well.

Note: These expand a lot in baking (I'd say it almost doubled in size), so make them narrow unless you want really big pieces.

I made these this morning. They didn't stay together very well, but otherwise they were such a big hit, my dd asked me to make it for monday so she can take it to school Confused . I told her it's not pesach, but she said she doesn't care because they're yummy! Her words.

Interesting, mine stayed together well, though they were a little on the fragile side (just a little though). I did glaze with chocolate and sprinkled with carmelized almonds and they really looked nice on a cookie platter. Personally taste-wise I prefer them without the chocolate glaze.
