Jelly Nut Squares

5 eggs, separated
½ c. margarine
1 ¼ c. potato starch
1 tsp. vanilla extract or 1 pkg. vanilla sugar
1 ½ c. sugar
juice of 1 lemon
½ lb. ground nuts (almonds are good)
1-12 oz. jar jam (raspberry, apricot, strawberry)

Preheat oven to 350 degrees. Cream yolks with ½ cup of the sugar and the margarine. Add juice and starch, alternating. Spread this evenly in a 13 x 15-inch jelly-roll pan.

Soften jam by mashing well with fork or potato masher. Spread jam over yolk layer with a rubber spatula, using care not to break through the yolk layer, and avoiding edges of pan. Beat whites until firm, adding remaining cup of sugar, then mix in nuts and vanilla. Spread this over jam layer. Bake at 350 degrees for 50 minutes. Cut into squares when cool.
