saute some onion in a bit of olive oil.
add carrots cut into julienned thin sticks.
add to pan and saute just a few minutes, until carrots are crisp tender.
season generously with kosher salt to taste.
serve at room temperature.

Besides carrots and zuccini what elsle can I use? I want another color

I prepare sweet potatoes by either cooking in cubes and draining water, or baking in rounds. Then I sprinkle with a bit of sugar and cinnamon.

I'm late, but ...
Take about a pound of baby carrots. Cut in half length-wise. (You can use regular carrots, cut to about that size.) Place in medium saucepan with 1 cup water, 1 cinnamon stick, 1 tsp salt and 1-2 tbsp sugar. Bring to boil, cover and simmer 7 to 10 minutes. Uncover, add 1/4 cup vegetable oil, and continue to simmer until soft, about 10 minutes. Serve hot or cold.

for Pesach? carrots, kohlrabi, and purple onion all cut into strips. serve raw. season with olive oil, lemon juice, kosher salt
