This recipe is definitely the BEST!
they're soo good I need to share!!

I just made the BEST whole wheat oatmeal chewy chocolate chip cookies!! (pareve too)

1 cup margarine, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
1 3/4 cups white whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
3 cups quick-cooking oats
1 bag of chocolate chips

In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; mix together with hands until well combined and distributed. Mix in the quick oats and chocolate chips. Roll into small balls on an ungreased baking sheets.
Bake at 325 for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to cool completely. ENJOY!!

These were soooo good! I don't like using margarine so I subbed in coconut oil and they came out amazing - though if you don't like the taste of coconut I wouldn't recommend it in this particular recipe.

Do you use the equivalent amount of coconut oil as the margarine?

Do the oats need to be quick cook kinds? Or will regular be fine?
