It is our custom to cook the sugar we use during Passover. Now that the holidays are over, is there anything I can do with the liquid sugar, or shall I just toss it?

Use it to sweeten cold drinks like iced coffee or iced tea. It incorporates better then a packet of
Sweetener.

I make lemonaide. Add 3 cups of sugar water to a 4 litre jug. then add 2 cups of lemon juice and then 8 cups of cold water. There ya go!! Ice tea is more complicated. I brew 1o cups of tea in a huge pot (10 cups water boiled to 7 single use tea bags. Add to a 4 litre jug, 2/3 cup of lemon juice, 3 cups of sugar water, when tea is cool, add to top of jug, discard rest of tea.

you can also use it to make compotes, apple sauce, or sorbet. A bit time consuming but candied peels as well.

Simple SYRUP. Simple sugar is a compound like glucose as opposed to a disaccharide or polysaccharide. Simple syrup is used in mixed drinks (cocktails) and ices. If you know how much sugar you used in how much water, you can use it regular recipes and add less water than the recipe calls for. For example if your challah recipe calls for a cup of sugar and three cups water, use a cup of syrup and two cups water. That's not exact but you can add more water later if need be.

If nothing else, you can always use it to sweeten your coffee and tea. You'd be a fool to toss it, and it would be violating bal tashchis, too.
