im having a guest who is gluten-free so I wanted to make sure I have a proper appetzier. Im probably also having an israeli couple so I really wanted something more sephardi-inspired. I was thinking kofta (ground beef kebobs) over jasmine rice but im worried it may dry out. Any good/creative ideas?

- lots of israeli salatim, with GF bread or crackers to dip
- lettuce salad with strips of meat/chicken/fish
- mini wraps made with lettuce as wrap
- mini saucy meatballs over rice
- salmon over brown rice angel hair
- Moroccan fish yummm

although your idea sounds awesome

Twice-baked potatoes make a nice appetizer.

First, bake a buncha small-ish potatoes wrapped in foil. Let them cool then cut in half and scoop out most of the potato stuff inside. (you should have a bowl of mashed potatoes after you finish this... which you can serve as mashed potatoes or you can combine with something to re-stuff the potato shells)

Fill the potatoes with something tasty... always make it dairy and combine cheese and sour cream with some of the mashed potato stuff inside, but if you're making fleishiks, what about BBQ chicken or seasoned ground beef?

It looks pretty when you serve it and they re-heat well on a plata.

Another appetizer idea would be grilled vegetables. Cut zuccini, eggplant, sweet potato into thick slices, brush with oil and bake on a baking sheet until cooked and crispy. (of course, you flip them over once during the cooking process so both sides get cooked nicely)

Gee you people are so ambitious.
I would just serve a half a melon.

FS, sounds good to me!

How about 1/2 small winter squash, steamed/baked?

Or a nice salad? You can make something with tehina dressing and/or garbanzos to make it more substantial.

I just wanted to comment: I love all the basari appetizers people suggested, but when I go to someone' house and they serve meat-containing appetizers, I almost never have room for the main coure, and I feel so awkward not eating when everyone else is.

But maybe I just have a very limited meat consumption capacity.
