Marinated Eggplant
from another site
quarter cup EACH vinegar, vodka, water, sugar
dill, to taste - fresh or dried
eggplant, sliced
juice of a lemon
a small cut up onion
2 cloves garlic
Sweat your eggplant, if you want to, then add everything together and let sit in small dish, in fridge, until serving.

I know this is old, but I just found it & I have some questions for anyone who has made it:
Do you really leave the eggplant raw?
Do you think I can skip (or sub) the vodka?
