PUMPKIN PIE SQUARES
You can use this as a kugel or a dessert.
Crust
1 box cake mix, yellow, spice, or gingerbread
1 stick melted margarine
1 egg
Filling
3 cup pumpkin pie mix, canned (the 1 lb., 14 oz size) - see below for substitute
2 eggs
2/3 cup milk or substitute
Topping
1 cup reserved cake mix
1/4 cup sugar
1/2 stick margarine
1 tsp cinnamon
• Grease bottom of 9 by 13 pan.
• Reserve the cup of dry cake mix for later.
• Combine the remaining cake mix, margarine and the egg. Press into pan.
• Prepare filling by mixing the pumpkin, 2 eggs, and your liquid and blend until smooth. Pour over crust.
• Combine topping ingredients and sprinkle over filling layer. Bake at 350 degrees for about 45 minutes, or until your knife comes out clean.
Good cold by itself, or with ice cream for dessert (vanilla or butter pecan).
(You could probably even skip the topping layer if you were short on time, and just use the whole cake mix for the crust.)
If you can't find the cannned pumpkin pie mix, you can use two cans of 15 oz pumpkin. Make crust the same way and then . . .
Add add 2 eggs, 1 tsp EACH of ground nutmeg (we prefer ginger) and cinnamon, 1/2 cup sugar, 2/3 cup nondairy creamer or soymilk.
Make your topping the same way and bake at 350 for 55 minutes. Makes 18 servings.

cooked pumpkin and spices for the pumpkin pie mix can?

I couldn't find the big canned mix OR my recipe so I hunted around for some help; see my original post for helpful changes.

I'm assuming this is posted in the Kugel and Side Dish section by mistake, right? It's a dessert?

Cake mix and sugar in a kugel? Sounds pretty sweet. My kid would like that, which is why I'd never do it. But as a dessert, it sounds tasty, like a pumpkin cake.

I agree it sounds more dessert-like. But I've been served many kinds of kugels during meals that tasted like dessert to me, so I guess it's not that weird. I never mind having dessert in the middle of a meal! (Could be the reason I can't lose any weight, lol!)

I'm part Hungarian. Are you saying this can be my new excuse for my sugar addiction?

This sounds really good. I have all the ingredients. . . maybe if I ever get around to having guests over for a Shabbos meal I'll make this for dessert.

I'm an avid baker, generally bake from scratch, but once in a great while I find it convenient to use a mix for something. And I like recipes that are doctored cake mixes, to make them more interesting and less chemical-tasting.
