Pomegranate cake

6 eggs separated & whipped to snow

1 3/4 cups brown sugar
3 tsp baking powder
3/4 cup oil
3/4 cup pomegranate juice [POM make sure it's pure no other fruit]
3/4 cup orange juice
2 tsp lemon juice
3 1/2 cups flour

mix fold & bake at 350° in a round 9" pan for nicest I use mini bundt pan for single serving desserts

don't know how long - till they're ready I suppose ...

when cooled glaze with confectionery sugar mixed with a bit of pom juice then decorate with actual pomegranate seeds

as a born baker I take too many things for granted ... my dear married baby girl pointed out to me the flaws in this recipe - so you can thank her if you crave a pomegranate cake but couldn't follow

here are the corrections

when I say 6 eggs separated ... use the whites to make snow [with a little sugar and vanilla]

use the yellows to mix in with the rest of the above ingredients and then continue per above instructions

Yes indeed this is a recipe of a baker who knows how to fill in the blanks.

Is anyone watching the Great British Bake Off? Such an addictive show and the middle test is they are given sketchy instructions for a baked item. -Smile

If no one will eat it, don't bake it. I hope that this year brings clarity, ongoing menuchas hanefesh, health, simcha, meaning, and obviously ample kochos necessary to maximize the opportunities.
