ok, I'm looking for a 'different' kind of chicken. kinda bored with all mine even though I'm pretty creative.

we use whole boneless chicken breasts.

any ideas?

onion chicken with french's onions is always a big hit.

the recipe DH absolutely loves I found on here- its called 'pulled chicken'. I do not recommend it for Shabbos day though- I think it gets way overcooked. The recipe is:

1.5 lb chicken cutlets (4 halves)
1 onion, sliced
1/2 cup Marian Davis' BBQ sauce
1 T brown sugar
3 cloves garlic, crushed
2 T soy sauce

In crockpot, layer chicken, onion, BBQ sauce, garlic, and soy sauce. Cover and cook on High for 3.5-4 hours or low 6-8 hours. Using 2 forks, shred chicken. Use in sandwhiches and add toppings - mayo, lettuce, pickles...

(can add a can of drained pineapple chunks and a bit of vinegar into the mixture in crockpot before cooking)

breaded with different flavored breadcrumbs

stuffed w/ pastrami

stuffed w/ broccoli kugel

stuffed w/ mashed potatoes

stuffed w/ couscous & dried fruit (DH requested never again!)

grilled with various herbs or spices (basil, oregano, garlic, cumin, smoked paprika, thyme & lemon)

coated in french's fried onions

honey mustard

mushroom sauce

sweet curry sauce (my FAVE)

pesto (my other FAVE)

it sounds like a lot but I'm just in the mood of something new....

sounds delicious, but a little too weekday-ish for us. might try one day though!

Olive chicken? Brown chicken, remove from pan. Sautee onion, add chopped tomatoes and well rinsed whole green olives (from a jar). Season with salt, pepper, paprika and turmeric. Let it cook down into a sauce and then add chicken back to the pan. Simmer until cooked through.

From Dining In again

Blend onion, mushrooms and bread crumbs and spices.
Stuff chicken cutlets like cigars with it and bake.

oh, and my husband is not overly fond of sweet chicken. I've converted him on a lot of recipes but fruit-based things are totally out.

sigh.
cranberry chicken will be made on a week with lots of guests when I'm making a 2nd type too!

forgot to put this on my list. I make a similar one stuffed with mushrooms & onions all the time.

cranberry lemon chicken

chicken
pepper
dried dill
1-2 lemons
1 bag fresh cranberries

sprinkle pepper and dill on chicken. squeeze lemons over chicken. pour cranberries over. bake covered for most of the time, uncover towards end of cooking time. (I do this all by feel, sorry not that specific.)

Oven Baked sesame chicken:

2lb chicken cutlets, cubed
1/3 cup flour
1/4 cup ketchup
1/2 cup brown sugar
1/4 cup vinegar
1/4 cup olive oil
1 Tbsp mustard
1/4 cup warm water
1Tbsp sesame seeds
Fresh parsley, optional

Preheat oven to 350. Spray a 9x13 with cooking spray.
Place the cubed chicken in a large Ziploc bag, then add flour and Shake the bag to coat the chicken. Lay the chicken on the bottom of the prepared pan.
In a medium bowl mix together the ketchup, brown sugar, vinegar, olive oil, mustard and water. Stir until smooth. Pour over the chicken and sprinkle with sesame seeds.
Cover the pan tightly and bake for one hour. Then uncover the pan and bake for an additional 15 minutes.
Sprinkle with additional sesame seeds and fresh parsley before serving.

I've made easy sesame chicken too. (duck sauce, soy sauce, brown sugar, sesame seeds). I should put that on my Shabbos Menu Ideas spreadsheet so I don't forget it as an option!

hmm, what makes this different than chicken in mushroom sauce? the wine? paprika?

google says piccata just means it is sliced, coated, sauteed, and served in a sauce. so I guess it's basically the same as chicken in mushroom sauce.
