I really like the look of this recipe, but what s Vanilla Protein Powder and can I substitute it with something or just miss it out?
Oatmeal Blueberry Pancakes
Ingredients
½ cup Oatmeal (Old fashioned kind)
1/3 cup Egg whites
1 scoop of Vanilla Protein Powder
1 tablespoon Ground Flaxseed
¼ of a ripe Banana
1 tablespoon Greek Yogurt
1 teaspoon Cinnamon
1 teaspoon of good Vanilla extract
¼ cup frozen Blueberries
Makes 1 serving of 2 pancakes, 30 grams protein, 30gram carbs (approx.)
Directions
Throw everything except blueberries in the blender and blend until smooth. Spray pan with oil and get it hot like a griddle, pour half of the mixture into pan, and place a few blueberries on top. These pancakes won’t “bubble” on top like regular pancakes, so you need to watch the bottoms. When bottom is lightly brown and the pancaked is cooked halfway through, flip and cook the other side – this will also heat the frozen blueberries. When done, remove pancake and pour in the rest of the batter, repeat.

sounds like a healthy high protein recipe ... vanilla would be the flavour & protein powder would be a powder you mix with liquid to make a high protein drink ... replace it with milk or milk substitute or leave it out altogether
who on earth makes a recipe with 1/3 of an egg ?!?!?!

I can't see why you couldn't skip it altogether, but you could also try subbing an equal volume soy flour or instant nonfat dry milk or using the whole egg instead of just the whites. Pancakes are not like angel cake--the recipes are very forgiving.

protein powder fills you up. it's a cheap and easy way to up your protein intake, specially if you exercise.
having said that, I don't care for the taste of protein powder in baked goods. it's Ok in smoothies tho.
