I'm looking for a recipe of a side dish made with fresh ginger. (Or other recipes with ginger.) Any ideas?

Mix oil, soy sauce, and ginger together and pour over steamed green beans. Top with sesame seeds. Enjoy!

thanks, only1. I have green beans at home, so maybe I'll try it for Shabbos. Is the sauce cooked at all?

in a bowl, put bean sprouts (the big crunchy ones), sliced mushrooms, fresh minced ginger (just a little), garlic powder, a little olive oil, and soy sauce and mix it all together for an amazing salad. let it sit in the fridge for a couple hours so everything absorbs.

No it's more like a vinagrette, not a sauce. You can also add some sugar.

You can also freeze fresh ginger for later use.
