I know this sounds crazy, but this is the first Shabbos in forever that I am not having company. I usually make a big meal for Shabbos. This coming Shabbos we are just 5 people and I have no koach to patchke but I would like to make a respectable meal since it is shabbos. I have one vegetarian at the meal. I think I spoiled my family by having huge Shabbos meals with lots of food. Can you help me with a filling SIMPLE ( read that again... :-) meal.

Do lots of salads with one kugel and chicken

salads (can be assembled before the meal on shabbos)
dips
some gefilta fish/egg salad/chopped liver
a cholent (veggie or meat)
if you reheat food on shabbos you have more choice as well. Kugels, chicken, schnitzle etc

I do super simple shabbos lunches. We have fish, dips, cholent, a green salad and some weeks I make an extra like quiche, pasta salad or wraps.

All DH wants for lunch is cholent. Challah and cholent. And I'm not someone who loves to cook... things that will not be eaten especially. :-)
So my version of a menu when we have company probably fits your definition of a simple menu.
Gefilte fish or salmon (could be the main for your vegetarian as well)
2+ salads (lettuce, pasta, etc.) or sides (string beans, kugels)
chicken/deli/deli roll or cholent (I only do both if I don't know that everyone will just want cholent)
simple dessert and fruit
