a few years ago I did a shabbos tu b'shvat menu and it was a lot of fun. I'm trying to remember what I did - I'd love to do it again.
- Pecan Chicken with Apricot Chutney
- Green Beans with Mango
- Purple cabbage salad with mandarin oranges and almonds
- Baked apples in dough with raisins and walnuts
That is 8 so far.

I once had a Tu B'Shvat salad recipe. I think it had all teh 7 minim. I am pretty sure it was Tamar Ansch's from the Hamodia. Does anyone have the recipe? I would like to do that.

Noone in my family is a fan of sweet main course, so most of the fruits would show up as a fruit salad.
We also incorporate 7 minim... Braised lamb with olives and pickled lemon. Hamin with wheatberries, or I may just make bulghur pilaf. Barzegan dip with pomegranate molasses (and bulgur). Sticky toffee pudding (with dates). Robinson's barley water for drinks aside from 4cups of wine.

I'm making apricot chicken, apple kugel, leafy citrus salad (with lettuce and oranges), and a nut cake for dessert. (Plus TONS of Tu Bishvat fruit, of course!)

Few Choices:

(you can omit the salad dressing mix in the recipe)
Avacado and mango salad
Boil greenbeans until not mushy (about 6 minutes and rinse)
Add
1 avacado diced (optional)
4 - 6 scallions diced (optional)
2 large handfulls dried mango diced (add right before serving)[Or you can use fresh]
1/4 cup sunflower seeds
1/4 cup chopped pecans
Dressing:
2 tbsp honey
2 tbsp dijon mustard
1 cup italian dressing (store bought or home made - I normally make the recipe from Spice and Spirit)
Serve cold or room temperature

How do you make apricot chicken?
I just found out I am having a guest for Shabbos, so there is a reason to make something special . (DH and Dc really couldn't care less and I can't see putin in any special effort for me.)
I am loking for ideas that do not include dried fruit or nuts since dc are too young for that.
