Vegetarian menu

Hi we are having a gust for Shabbos who is vegetarian. Do you have any ideas of menus I can make.
it has to easy and with plain (meaning not too original) as he is a bit of a fussy eater!!!!!!!!!!!!!

Does he eat fish...eggs....honey . . . chicken or turkey . . .

I'm a vegetarian. Here are some ideas. (They're pretty simple b/c you said your guest is picky. But if you want to get more interesting, there are tons of yummy dishes to try.)

Kiddush
Challah (I make 50/50 white flour and whole wheat flour)
--
Lots of Salads and Dips... (A vegetarian's favorite part of the meal!)
To get some variety I put out:
1 lettuce or spinach based salad
1 vegetable based salad (cabbage salad, cherry tomato salad with pine nuts, brocilli salad with cashews and craisins, etc.)
1 pasta salad
chumus
chatzilim
sparlic (1 part minced garlic to 1 part chopped parsley, flavored with lots of olive oil and some salt to taste)

Vegetarian Soup

Main Course:
As an entree, I like to make stuffed vegetables. Stuffed peppers are super easy to make and if your guest is picky, this is a pretty simple dish that can be made without too many "interesting" ingredients. You can also use fake ground beef to mix in with the rice and sauce.
Veggie Side Dish (Greenbeans, Sauted Kohlorabi, etc.)
Rice/Couscous/Quinoa...but not if you're making rice-stuffed peppers!
I usually keep most of the salads on the table for the main course as well.

Dessert:
My latest trend: Homeade applesauce warm from the blech, (it only takes minutes to prepare and it's sooooo good!) with Oatmeal-Raisin cookies.

Now the only thing you need to add it 1 chicken dish for everyone else and you're set!

If he eats fish, there's always salmon.

I would go heavy on the salads and veggie side dishes. For his protien dish, lentils or beans are always good.

If he's picky, why not ask him what he'd like? I've done that with vegetarian friends, "I want to make sure you won't be hungry. What kid of dish(es) can I make for you?"

I often have vegetarian guests. As Binah said, most are happy with dips and challa. You could make a vegetable soup, and just make sure all your side dishes are vegetarian friendly.

You can add nuts to a vegeteble stir fry for protein.

Veggie stir fry, is a great idea... nuts or tofu for protein.

If you can purchase pareve fake meat, there are tons of things you can make - that can act as a main dish and so the person won't be eating a bunch of side dishes.

You can make:
mashed potatoes and "meat" stuffed inside pastry dough and topped with mushroom sauce

vegetarian tacos

spaghetti and meat sauce (or just make a hearty meatsauce)

lasagna with tofu and lots of veggies

shepherd's pie

if you have fake chicken or meat strips, you can make a stir fry
