I have a bunch of chicken from soup, all piecey so can't be served whole. Any recipe I can make out of it? I experimented a bit with patties but did not meet much success... replies before yomtov extra appreciated Smile

You can skip the eggs if u want , just use lots of onions and salt /pepper

Stir fry ! Fry up some onions and brocolli or other stir fry veggies, add chicken pieces.

I sautte up onions, garlic, celery and peppers. add the chicken, salt and pepper. If you have crepes, you can fill the crepes and then fry them. I like to serve it with mushroom sauce. It is a bit of work, but delicious. My kids are begging me to make them for the second days. We will see if I have the time.

OK, I'm salivating. Thanks for the inspiration. I wonder if DH will consider stir fry appropriate yomtov fare or if I should hold it until next week... maybe freeze the chicken? It's from the first day of yomtov :-/

make chicken crepes!

they are a staple on pesach here.

you make an egg crepe (blended eggs, water and pot startch) pour batter in to hot oil in a pan, a very thin layer.

sautee the chicken with onions and mushrooms.
put mixture inside crepe, pack it up

serve w mushroom sauce.
yumm

Don't freeze it at this point.
It's 5 days old. That's the absolute last day you can eat it.
Make something with it and serve tonight.
Vordale's chicken crepes/blintzes sound good.
Otherwise get rid of it.

Forgot to mention for the first couple of days the chicken was almost totally frozen anyway because my fridge got turned too high by mistake. But I'll make it today to be on the safe side. It looks/smells/tastes fine.

Next blintz/crepe question: How do you get them to stay closed?

Mushroom Sauce

• 1 medium onion, diced
• 3 Tbsp oil
• 1 small can mushrooms
• 1 Tbsp potato starch (appoximately)
• 1 cup chicken soup broth
• salt and pepper to taste

Sauté onion in oil over medium high heat until soft. Add mushrooms and sauté an additional 5 minutes.
Dissolve potato starch in broth. Add to pot.
Continue to cook and stir another few minutes, until thickened.
Season with salt and pepper to taste.


To make blintzes (how you keep them closed):
Fry crepe on just one side. Place filling on cooked side. Roll and secure. Fry assembled blintz on uncooked side.

Anyone know how much chicken one needs for the crepe recipe posted? I've made by chicken soup out of frames but there's quite a bit of meat on them.

Whatever you have... one soup worth of chicken bones was more than enough for crepes for the whole family. It was a large soup and a small family, but still. It was quite tasty, too!

Taquitos
Fry Ann onion add shredded chicken and any spices you like. Garlic paprika cumin.
Put chicken mixture into CORN TORTILLAS the small ones
Roll up with toothpick. Fry.
Ur kids and husband will gobble!

Fry with onions, garlic, mushrooms and red peppers. I may even add shredded zucchini. Roll in fresh pesach crepes. Pile in a pan. Fry just before serving.
