If you give us an idea of what you want, we'd gladly help out. Are you looking to serve a 3 course meal? 5 course? Smorg? Viennese table? Give us more information and the ideas that you have and we can help you build on it. It's not so clear what you're looking for.

Start with a salad And either nuts, fish, cubes of chicken or deli on top

Soup -no need for choice
Chicken
Starch such as rice or potatoes
Roasted veggies

Colselaw and cuke salad on table

Oh and don't forget the challah
And dessert can be ice cream with a dessert sauce drizzle

I vote for a milchige buffet:

challah rolls
flavored butters (like with herbs mixed in)
lasagna
a parve pasta (labeled so people know)
quiche
a lot of different salads
salmon if you can afford it

for dessert: fruit platters and pretty cupcakes

I've done milchig once or twice and it comes out super-expensive. Unless you have a big budget -don't even try it.

There is a formula for basic fleish sheva brachos (similar to wedding menus)-

Challah rolls
Appetizer- salad/soup/knish of some kind. not all three, but one.
Main- chicken or meat of some kind. ie. roasted chicken pieces, shnitzel, grilled chicken, steak...
Veggie side- hot veggie ie. asparagus, green beans, grilled veggies...
Starch side- ie. potato, cous cous, rice...
Sweet side- ie fruit cobbler, sweet kugel....

assorted salads on the table

Dessert- ie. ice cream, sorbet, cake topped with mousee.... fruit

chinese noodles and duck sauce on the table, appetizer won tons, or egg rolls or asian cabbage salad or egg drop or hot and sour soup
main- stir fry and rice, or sesame chicken, rice and broccoli( sesame) or sesame green beans
dessert cut up fruit and wonton cookies, or overtime cook has a recipe for apple wontons


mexican
appetizer taco salad
main brisket, rice and beans, sauteed veggies
spicy chicken, yellow rice and roasted veggies
chile hot chocolate souffles

japanese
appetizer- edamame on tables, sushi salad or sushi
miso soup
teriyaki chicken or beef, rice and sauteed greenbeans or mushrooms
dessert- tempura ice cream or fruit salad with lychees

isreali
chummus and salatim on tables- can skip the appetizer if you put out enough

baby chicken and mashed potatoes, meat falalfel from Fresh and Easy over rice.


dessert- halva ice cream

classic
deli salad for appetizer
schnitzel roll ups, sauteed veggies, apple kugel muffins and baby roasted potatoes
dessert- toll house cookies

grilled chicken with not sure yet what sides
dessert hot chocolate cake with ice cream
pickles, coleslaw

I would serve the potato bourekas with mushroom sauce to make it fancier

sides can be baby potatoes and sesame string beans or wild rice with craisins and fried onions and a vegetable kugel muffin or roasted butternut squash cubes

OP, I think you're ideas are great. I also followed "the formula" for the plated main. I think the sweet side dish is optional but nice if you can. With grilled chicken, I would recommend rice and grilled vegetables. I made rice with mushrooms. It had enough interest on the plate but was 'plain enough' for the men. Grilled veg on a skewer looks nice. The variety of veg adds lots of color to the plate.
