Mon: baked ziti, Greek salad
Tues: seared tuna steak, steamed broccoli, sweet potato fries
Wed: individual pizzas, garlic knots, chopped salad
Thurs: smoked salmon (lox) salad, warm crusty baguettes

Sun: fresh salmon burgers, toasted buns, aioli, sliced onion and tomato (or maybe we'll just go with bought sushi and avocado salad)
Mon: blintz loaf, pasta salad with choice of cheese or salmon cubes, fresh bread, watermelon, gatorade, eggs and ashes

I go for easy stuff, and dh doesn't really like heavy creamy cheese dishes, hence our menu!

Monday night: Tofu Stir Fry, Near East Rice, peas, and cucumbers
Tuesday: Falafel (bought), pita, chummus, and salad
Wednesday: Teriyaki Salmon with either frozen potato knishes or more Near East Rice and California vegetables
Thursday: Omelets and cheese, either knishes or rice (whatever we don't eat Wednesday), and salad

Mon: lasagna and caesar salad, milchig coconut cupcakes
Tues: fish tacos, with the works, guacamole, cabbage, mayonesa suace, pico de gallo
Wed: goat cheese tomato tart and salad
Thurs: homemade pizza and eggplant calzones, salad
Sun: french onion soup with french bread
Mon: pasta with pesto, salad
Tues: minestrone soup, cheddar cheese buns

Mon--Crepes with caramelized apples/cream cheese/chocolate
Tues--Tomato and roasted red pepper soup, garlic bread
Wed--Tuna rice patties, homemade slider buns, cut up veggies with dill dressing
Thurs--Pasta with cottage cheese and hidden veggie sauce
Sun--Crunchy breaded tilapia, mashed potatoes, veggies with Caesar dip
Mon--Pasta salad with cheese, minestrone soup, baguettes with various cheeses, grapes, eggs
Tues--(to break the fast) Homemade onion rolls, cheese, vegetable soup, cinnamon buns

2 lbs. sweet potatoes, peeled and cut into 1/4 - 1/3" thick fries
1 1/2 Tbsp olive oil
3/4 - 1 tsp kosher salt

In a large bowl, toss the sweet potato fries with olive oil. Arrange in one even layer on 2 sheet pans.
Bake uncovered for 40 minutes, rotating the baking sheets in the oven from top to bottom halfway through.
Toss with kosher salt. Serve immediately.

Or do tri-colored fries.

Pizza Dough

1 cup very warm water
2 1/4 tsp dry yeast (1 packet)
1 Tbsp sugar
3 cups flour
2 Tbsp oil
1 1/2 tsp salt

Dissolve yeast and sugar in warm water.
Combine all ingredients and knead until a good dough is formed.
Let rise 30 minutes.
Roll out and arrange on greased pan.
Prick pizza dough and bake 10 minutes at 350.
Add sauce and cheese or your choice of toppings. Bake at 400-450 until bubbly.

Use extra dough for garlic knots.

how about cheese latkes? potato latkes with sour cream? lasagna? baked ziti? pancakes or french toast for supper? french onion soup? homeade falafel? tuna patties?

this hot weather has made us a fan of big garden salads topped with a protein like salmon or tuna....cut up lots of fresh veggies and mandarin oranges and make a refreshing simple salad dressing.

grilled veggie skewers (add cubed fish like salmon), lemonade, and watermelon? haha it's definatly summer!

I made black bean and rice burgers with cheese last night. They were yummy! And I'm doing Indonesian peanut saute today (peanut lime pasta and veggies, using tofu instead of chicken).

How do you make the black bean and rice burgers? That sounds like my taste!

I don't really have a recipe, but I put partially mashed black beans, rice, a handful of shredded cheese, an egg, matza meal, some powdered garlic and onions together until it made a patty. Then I pan-fried like a burger and served on buns with cheese, lettuce, tomato, taco sauce, and avocado to make each person's own "burger." It was yummy!
