Made a veggie shashuka today, really good, even cold.

Sauteed few cloves chopped garlic, few onions, chopped peppers (great to use up the older wrinkly ones) and lots of ripe tomatoes in a little oil in frying pan (ovenproof is best if you want to bake in oven). Added crushed tomatoes, salt, cayenne, fresh/frozen parsley and cilantro and simmered till soft. Mixed in a few eggs and broiled in oven a few minutes until the eggs set. Some like whole eggs broken on top but I like them mixed in. Very yummy. Can serve with crusty bread or any other starch if you prefer.

Can I get the blintz loaf recipe.
I'm on my phone now and so not have the ability to search, copy and paste right now. You can search for Blintz loaf under my name, I think I may have posted it before.

Do a search for lentil burgers under greeneyes.
I use 1.5 cans rinsed and drained lentils. I use the food processor and use as much breadcrumbs as listed.

I go for easy stuff, and dh doesn't really like heavy creamy cheese dishes, hence our menu!

Monday night: Tofu Stir Fry, Near East Rice, peas, and cucumbers
Tuesday: Falafel (bought), pita, chummus, and salad
Wednesday: Teriyaki Salmon with either frozen potato knishes or more Near East Rice and California vegetables
Thursday: Omelets and cheese, either knishes or rice (whatever we don't eat Wednesday), and salad

How do you make your tofu stir fry??
