I just stayed at the Adi hotel. It is said to be the cheapest hotel in Eilat. I was expecting a dump, but it's clean and well maintained. I chose to have three kids in my room, so with four beds it was tight, but still manageable. (My DH didn't go on the trip.)
Adi is right near Halleluya, a glatt fleishig restaurant, which looks nice, tastes good and the staff are friendly.
It's also about two blocks away from the Kenyon Mall Hayam, which has a mehadrin Café Café immediately right inside the mall that was very good.
This hotel doesn't have a pool.
