I am sorry if I posted this in the wrong forum...
My in laws are coming for sukkos and I have no idea what to serve! I need a main and 3 sides for the main course for each meal: one side can't be too carb'y since my FIL is diabetic; one can't be vegetable for DH since he won't eat it; one should be vegetable for me and mil who are dieting. And I don't want to serve the same thing every meal..
Please suggest!!! Help....

He prefers something low in he glycemic index. But it doesn't have to be heathy since he's a real junk lover.

I wasn't so specific cuz I'm not sure myself and that's why I need suggestions. He SHOULD be eating vegetables and brown rice but hates it so I need to make something he'll accept and eat that tastes yum. But it's more the other sides I need ideas for.
I reached out for help cuz plain and simply, I need IDEAS of any shape and form!

maybe call your mother in-law and ask her what she makes that he eats and just do that? you can't go wrong that way (hopefully).

what about roasted sweet potatoes? Would your husband eat those? Would your FIL? They are definitely lower glycemic index than white potatoes or rice.
Broccoli kugel might be another idea. You can make a healthier version to accommodate the needs of the dieters and the carb averse.
ra_mom mentioned quinoa. That might be a good thing, especially since you can make a delicious quinoa salad and it's something that doesn't need to be served warm.
As far as the meat goes, it sounds like you don't need to worry too much as long as you don't choose sweet recipes or recipes where meat is wrapped in dough. So roasted chicken, pot roast, meatballs, etc. would all work.

doughless potato knishes
pastrami orzo
Do you need more than 4 options?
