Healthy low carb/fat soups

I am sure there are a ton on here but... could ppl just give me ideas? im kinda bored of a basic veggies soup and zucchini soup... my DH wont eat any that has tomatoes or beans in it... and neither of us like sweet...

Fish soup. Layer your pot with lots of peppers (red, yellow, green, and one hot pepper if you want). Toss in the spices. For spices we use lots of chili powder and paprika. Garlic, salt and pepper. I put parsley and coriander and oregano in there too. Plop the fish on top of the veggies. Squeeze some fresh lemon onto the fish. Add water to the top of the veggies. Cook, simmering for an hour.

Pumpkin soup. Layer the pot with large pieces of pumpkin or butternut squash. Add water halfway up. Spices: lots of chili powder, paprika, garlic, salt, oregano, coriander and parsley, and just two pinches each of thyme and rosemary. If you like, you can throw in some (cooked) chick peas in there, too.

MY DH is really picky and doesnt like "strange spices..."
any more ideas r welcome! I really want to start making a lot of soups!
