I have a griddle that I use for pancakes.
I would love to avoid the whole standing by the stove all night routine and just make 8 latkas at once on a griddle with a good amount of greasing.
Does anyone do this?
Will it work?

My MIL does it this way. I didn't think they would come out so good since they can't sit in so much oil but they do actually crisp up nicely.

Would you make it direct on the griddle or on a parchment paper? I would also love to try it like that

I make cheese latkes on the griddle all the time. Would imagine it would work for potato as well as long as the mixture isn't too watery. The key to it not sticking is to get the griddle really hot before spooning on the latkes.
