has this been done before?

It would be great if we all could share our meatless recipes here. Recipe should be no more than 5 ingredients or close to it. and should include protein, starch and veggie. It would be great If I could have a daily reference day for recipes its a great way to menu plan for the week.

Salmon

Italian Dressing or Soy Vay teriake sauce. or lemon with smart balance butter
Salmon Fillets
Rice
Frozen chopped spinach


Sizzle Salmon in pan with Italian Dressing. Serve with rice and Spinach Very Happy
Not too creative but very quick and satisfying for whole family.

-falafel and all the fixins
-mushroom stuffed omlettes on toasted english muffins
-parve frittata with crusty bread

are meatless Monday's dairy free too?

I liked the baked falafal balls. They are not addictive like fried ones where you want to just pop them in your mouth. But they are delicious stuffed in pitas with Israeli salad or avocado relish and drizzled with homemade tehina.

the idea is to save money, or b/c meat is not healthy?

only b/c at least where I live, salmon is a whole lot more expensive than meat...

We do meatless mondays and Thursdays because of the churban (I think)

Thursdays are either macaroni and cheese, pizza pockets/grilled cheese and eggs, or store bought pizza, cheese blintzes or hot pretzels.

Last week Monday was cream of mushroom soup and garlic bread. You could also make cream of broccoli soup, french onion soup. You can make salmon/tilapia, lasagna, baked ziti, quiche, cheese patties, tuna patties (bake in the oven to make it faster/easier). Penne a la vodka is super easy. You can always make pancakes.

oh, interesting, I never heard of that!

thursday is always pizza around here b/c it's quick and easy, so I guess we are at least 'yotzei' that ;-)

lentil curry and rice is quick easy and cheap. I usually google for random recipes. Basically saute onions and other veggies, add lentils, (any colour) spices and coconut milk (optional) and cook for I think about 1/2 an hour.

Thanks for the inspiring dishes!

Meatless Monday, is meatless because its( hopefully) cheaper and involves more veggies!
Also Its challenging to get a good meatless entree that my kids will like....
keep the ideas coming!

How do you make your cheese patties? also do you make your own pizza pockets?

LIngunine and Anchovies


Linguini
Chopped Garlic
Parmesean cheese
olive oil
oregano/basil
Black olives


Add in anchovy fillets for the adults. My kids like this recipe w/o anchovies

I never knew there was a 'thing' of meatless Mondays.
In general we have milky/pareve on Monday and Thursday.

I make
Veg. Lasagna
Onion soup with grilled cheese and toasted bread croutons
Veg soup with noodles/rice
Fish sticks,
Scrambled eggs with pitta and salad
Baked potatoes with cheese/tuna and salad or sliced veggies.

I try to avoid oozy cheese dishes except for an occasional treat.

Tonight we're having red lentil-kale soup (red lentils, carrots, turnips, celery, kale, coriander, smoked paprika, etc.) and homemade 100% whole grain rolls (made with whole wheat flour, rolled oats, wheat germ, buckwheat flour, etc.) spread with ripe avocado.

Not so much cheese eggplant parm
with sauteed mushrooms in red wine
Mushroom pizza and regular cheese pizza for the kids.

Eggplant

Peel and slice eggplant, dip slices in egg a then italian breadcrumbs. Start layering with tomato sauce in a tin pan.
After about 3 layers or so, cover with not too much sauce and then add a small sprinkle of mozzerlla.
Then bake the whole thing covered at 350 until the eggplant is soft (about 45 minutes to an hour)

Slice mushrooms, sizzle it up with onions and then add some RED WINE, This makes a great topping to your eggplant parm. Very Filling!

Pizza- Purple cook books easy pizza recipe that uses apple juice. Excellent crust, kids think it tastes like Pizzeria Pizza!

Next meatless meal Im going to try is RA moms falafel balls. Im going to dip each falafel ball in PANKO then bake and see what happens!.
