What type of cheese is good to use in the filling? I'm going to be using fresh vegetables.
I'd also love to make a yummy, flakey crust to go together with it.
Any leads?

I like grated yellow cheese in the filling, something like Edam or even sharper like Cheddar, especially since the veggies you are using are not the assertive type.
For a crust I make the following recipe (makes enough for 1 smallish pie dish - you can double the recipe if you like for a larger crust):
1 1/4 c. flour
125 g. butter
35 ml. water (about 2 Tblsp.)
1/2 tsp. salt
1/2 tsp. sugar
Pulse all ingredients together in food processor until a ball forms (add a drop more water if needed).
Press into pie plate. I usually pre-bake it for about 10-15 min. before I add the filling.
