Challah advice- time sensitive!

Hi,
So I prepped challah with my daughter at around 7:00. I think I punched it down once so far. I think I'm technically supposed to punch it down three times but it hasn't happened. I want to go to sleep- can I just put it in the fridge or has it risen for too long and now I have to stay up to finish the deed?
Thanks so much.

Also I plan to make baked gefilte fish so I didn't put the gefilte fish in the freezer right away because I wanted it to defrost but didn't end up making it. Can I leave it in the fridge till tomorrow when I make it?

I would punch it down, make your challahs and set them in the frig to rise over night. Then bake them in the morning.

personally don't knead it more than once ... but put it in the fridge with space for it to rise - and make sure to take it out early enough so that the chill goes out of the dough for a good enough rise before you bake it

defrosted gefilte fish in the fridge works just fine

One last question-raw chicken in a bowl cover with tinfoil is fine in the fridge over night right- the entire bowl's not covered but I think all the chicken is.?
I'm having company so I want things to turn out ok and not get anyone sick

I would also put the bowl in a plastic bag so it doesn't smell up your whole fridge

No need to punch down 3 times! That sounds over-worked and over-risen to me.

Make the dough, let it rise.
Punch down, let it rest 5-10 mins, braid.
Second, much shorter rise (30 mins-ish)

I would never enjoy challah that Riesling enough to be punched down three times. Too yeasty tasting
