2 distinct doughs, together =10 cups of flour

I am making 2 things at once. One has 4 cups of flour, the other six. One is a dairy pastry, one is a pareve bread. One I am doing in a bread machine, the other I am doing by hand. Both have yeast and water, but the dairy bread has far more milk than water.

Do I take challah, keeping both doughs in mind, or no?

The minimum amount for a bracha is 12 chips. Since the doughs are different and not baked together, you would not include both. If you want to be safe, you can take challah withouta bracha from each batch.

I'm not a Lor,, but that would be my thought process.

dairy pastry, as in cheese danish or something of the like? I don't believe you need to take dough from that.

from the bread dough, even though it's not enough for a bracha, you should take off dough.

dairy is for cinnamon buns

I read under 8.5, dont take any challah.

Usually I make something with 3.5-5 cups, or something with 14-15 cups- never before anything in between,

I take dough, without a bracha, from challah made with 6.5 cups flour. I never specifically asked if I should do so, but I was under the impression that you always take dought when making bread.
