Husband working late again... I'm thinking of making tuna patties and french fries... He gets supper from a takeout place, his office pays for it... And I'll probably just eat Whatever...

Tuna casserole! One of DH's favorites.

a package of macaroni of your choice cooked slightly underdone
1-2 cans of tuna (depending on how many people you are feeding) flaked
4-8 oz. cheddar cheese shredded
2-4 cups of milk
about 4 TBS flour and an equal amount of margarine or butter

The easy thing is to use a can of cream of mushroom soup and a bag of defrosted mixed vegetables but we don't like that.

I saute mushrooms and onions, partially cook some sliced carrots and green beans and throw in a handful of peas if I have them. I put them in with the cooked macaroni and then make a cheese sauce by melting the margarine and then whisking in an equal amount of flour. I cook this for a minute or 2 and then begin whisking in the milk. I cook this, stirring constantly until the sauce thickens then add in the cheese, whisking until melted and blended in. Season it with salt and pepper and a little garlic powder and pour it over the macaroni and vegetables and fold it in well. Put into a greased casserole dish, sprinkle with bread crumbs and dot with butter. Bake until hot and bubbly.

It seems like it's a big patchke, but it really isn't that hard to do. And it tastes so much better.
