Just did this for dinner tonight with turkey cutlets but it'll work just as well with chicken if you flatten them a little...
Arrange in a single layer in a pan. Add diced vegetables of your choice (I like to use onion and mushrooms, sometimes bell peppers). Season with salt, pepper, garlic powder, basil and oregano, add a can of fire-roasted tomatoes, and bake covered at 350 for about 40-45 minutes.
