I guess I should clarify a bit. I often have leftovers from crisps Friday night. When I want to serve the crisps Shabbos day, they are soggy.

I've never been able to figure out why they're called "crisps"at all. never had one that was crisp, whether made at home, at catered affair or in restaurant. it's fine soft, or would be if they called it something other than "crisps", which sounds like potato chips.

When I make them fresh the crumble is crispy. It's what happens after a couple of hours that bothers me.
