I made cole slaw and never use it for more than two days, but now I have leftovers, is it gonna be fresh on day 3?

I've made cole slaw and eaten it up to 5 days after it was made. Check how it smells and taste a small piece if you're unsure about the freshness.
Are you using homemade mayonnaise or store-bought? I'd worry more with homemade mayonnaise.

The vinegar helps preserve it, too.
See how it smells and tastes. It should still be fine on day 3.

If it was very fresh when you made it, I'd keep it up to 6 days as long as it smells fine. But that's not scientific, just my experience of how long it tastes good. Probably starts to go downhill on day 5 already.
