Did anyone ever bake a corned beef instead of cooking it?
I have a glaze recipe (with apricot preserves and tomato sauce) but I want to bake it instead of cook it. Anyone ever try that? If yes, how long did you bake it?

I bake it. Got this recipe from Gourmet Glatt and it delicious & so easy. Put 1 cup water into a 9x13 and put in meat. Sprinkle on 1 cup brown sugar and 3 tbs. balsamic vinager. Cover & bake for 3 hours on 400.

I know that recipe.

Do you think I can bake the corned beef at that temp for 3 hours using a different sauce?

I bake the corned beef with water in the pan, tightly covered until fork-tender. It usually takes longer than cooking it in a pot on top of the stove.

Once cooked, I cool, slice, then put on a sauce and heat through. It comes out very good and is much easier and neater than cooking it in a pot.

I've done it that way but I find the texture is softer when I cook it.
that recipe has a great flavor though.
