Yummy Spelt Oatmeal Chocolate Chip Cookies!

Just sharing for all those other Imamothers interested in spelt recipes. These are really delicious! I just made them twice in a row. You can't even tell they are spelt! Here's the original recipe:

1 1/4 CUPS SPELT FLOUR
1 CUP QUICK/INSTANT OATS
1 TSP BAKING SODA
1/4 TSP SALT
1 CUP COCONUT OIL
3/4 CUP DARK BROWN SUGAR
2 TBSP RAW GRANULATED SUGAR
1 EGG
1 1/2 TSP VANILLA EXTRACT
1 TBSP SOY OR ALMOND MILK
1 CUP DARK CHOCOLATE CHIPS

Pre-heat oven to 175 C or 350 F.

Combine the coconut oil, sugars, egg, vanilla and milk with an electric mixer until smooth.

Combine the flour, oats, baking soda and salt.

Mix the dry ingredients into the wet ingredients and add chocolate chips. Make sure the chips are evenly distributed in the dough.

On a lined baking tray, scoop the cookies (about a tablespoon and a half of dough) leaving a small gap in between. (They don't expand as much as regular cookies so shape them how you'd like them to end up.)

Bake for 10-12 minutes. Let cool and enjoy!

**My changes:
I replaced the coconut oil for 3/4 of a cup of regular oil since I didn't have coconut oil. Keep in mind that this version DOES expand so make sure to space the cookies well.
I also kept them in the oven a drop longer, since I like my cookies well done.
I also added a dash of cinnamon. I might add a dash of nutmeg next time too, although the original recipes does not need any additions at all!

I use organic whole spelt, not white. If you are in Israel I use the company Mehudar.

Do you really need special recipes for spelt? I just use spelt instead of regular or w.w. flour in regular recipes and my cookies come out great.

Depends on the recipe. I have had problems in more dough like recipes equally substituting due to the absorption of water differences, but it works in my pizza dough fine.

This recipe I made yesterday with coconut oil, there was a bit more spreading than I would like, but not as much as if it would have been canola oil.
